Almond Blondie Cake

It’s not quite a blondie, and it’s not quite a cake.  But it’s quite tasty!  This treat should be saved for special occasions given the fat and sugar content.

  1. Preheat oven to 350 degrees and lightly coat a 9×13 baking pan.
  2. In a large bowl, combine both flours, sugar, baking soda, baking powder and salt.  Mix well.
  3. In a small bowl, stir together almond milk, soy margarine, soy yogurt, and almond extract.  Mix well.  Add to flour mixture and stir well to combine.
  4. Pour into greased baking pan and bake for about 40 minutes.  Test for doneness with a toothpick.
