Sweet Potato Pie

For extra boost of flavor, I roasted 2 medium-sized sweet potatoes in the oven at 425 degrees for around 1 hour. I let them cool completely before mashing them.
You can reduce the amount of spices if you prefer a milder flavor. Adjust cinnamon, nutmeg, and ginger to taste for a more subtle spiced flavor.

- Preheat the oven to 350 degrees F (175 degrees C)
- Combine all the ingredients in a large mixing bowl.
- Pour the mixture into your favorite pie crust and smooth the top. Bake for 50-60 minutes, or until the filling is set and the crust is golden. The pie might puff up slightly but will settle as it cools.
- Let the pie cool completely at room temperature, then refrigerate for at least 2 hours to fully set.
